It is a world-famous variety, grown all over the world and is typically used in blends. Bíbor Estates (Violet Winery) focuses on single varietal wines and high quality. The loess soil helps to develop the silkiness, roundness, firmness and deep purple colour characteristic of Merlot. This is further enhanced by long ageing in barrels. Although it is capable of high yields, in this vintage it produced only 1 kg per vine. It can be enjoyed on its own or with roast meats and stews.

The grapes are grown in an area with excellent ecological conditions, with low yields of 1 kg per vine. Harvested by hand. Temperature controlled fermentation. Aged in oak barrels of 2000 litres for 3 years and then in non-porous tanks.
