Our Sauvignon Blanc vineyard is located on the east side of Guard Hill in the Hugyika micro region at an altitude of 250m above sea level. The vineyard is forty years old, and the yield is only 6 grapes per vine, i.e. 1kg per vine. The early harvest helps preserve all the fresh tropical character of the grapes in the reductive wine. We follow the New World style in pursuit of harmony. The aroma follows the taste and the lovely playful acidity underpins the crispy grapefruit and lime character.

The harvest is manual in small 20 kg crates and the grapes are sorted on a vibrating table and then processed by gravity. Gentle pressing at 1 bar pressure, resulting in just 50-55% juice from 1 kg of grape. We apply natural yeast fermentation at low temperatures (13-14 Celsius). Aged and prepared for bottling in a stainless steel tank, the wine contains low levels of sulphur, it is histamine-free and free of preservatives.
